Ingredients
For the Crostini
1 baguette, sliced into ½-inch rounds
2–3 tbsp olive oil
Pinch of salt & pepper
For the Toppings
1 cup peas (fresh or frozen)
4 oz goat cheese, softened
1 tbsp lemon juice
1–2 tbsp olive oil
1 small garlic clove, minced
Salt & black pepper, to taste
Optional vegetables & garnishes:
Sliced radishes
Shaved asparagus
Mint or basil
Microgreens
Red pepper flakes
Drizzle of honey or balsamic glaze
Instructions
1. Toast the Crostini
Preheat oven to 375°F (190°C).
Brush baguette slices with olive oil.
Season with salt and pepper.
Bake for 8–10 minutes, flipping halfway, until golden and crisp.
2. Make the Pea Spread
Blanch peas (if using fresh) or thaw frozen peas.
Add peas, lemon juice, garlic, olive oil, salt, and pepper to a blender or food processor.
Pulse until you reach a chunky, spreadable texture. (Don’t overblend—texture is key!)
3. Assemble the Crostini
Spread a thin layer of goat cheese on each toasted baguette slice.
Spoon or smear the pea mixture on top.
Add veggie garnishes like radishes or shaved asparagus.
Finish with herbs and optional honey or balsamic.
Serve immediately.
✨ Tips for Extra Flavor
Add fresh mint to the pea spread for a refreshing twist.
Mix a little lemon zest into the goat cheese for brightness.
Use whipped goat cheese (goat cheese + a splash of cream) for a smoother base.
For a deeper flavor, add toasted pine nuts or pistachios on top.
