Ingredients

For the Crostini

  • 1 baguette, sliced into ½-inch rounds

  • 2–3 tbsp olive oil

  • Pinch of salt & pepper

For the Toppings

  • 1 cup peas (fresh or frozen)

  • 4 oz goat cheese, softened

  • 1 tbsp lemon juice

  • 1–2 tbsp olive oil

  • 1 small garlic clove, minced

  • Salt & black pepper, to taste

  • Optional vegetables & garnishes:

    • Sliced radishes

    • Shaved asparagus

    • Mint or basil

    • Microgreens

    • Red pepper flakes

    • Drizzle of honey or balsamic glaze


Instructions

1. Toast the Crostini

  1. Preheat oven to 375°F (190°C).

  2. Brush baguette slices with olive oil.

  3. Season with salt and pepper.

  4. Bake for 8–10 minutes, flipping halfway, until golden and crisp.

2. Make the Pea Spread

  1. Blanch peas (if using fresh) or thaw frozen peas.

  2. Add peas, lemon juice, garlic, olive oil, salt, and pepper to a blender or food processor.

  3. Pulse until you reach a chunky, spreadable texture. (Don’t overblend—texture is key!)

3. Assemble the Crostini

  1. Spread a thin layer of goat cheese on each toasted baguette slice.

  2. Spoon or smear the pea mixture on top.

  3. Add veggie garnishes like radishes or shaved asparagus.

  4. Finish with herbs and optional honey or balsamic.

Serve immediately.

  • Add fresh mint to the pea spread for a refreshing twist.

  • Mix a little lemon zest into the goat cheese for brightness.
